    I use doritos for my nachos. I like the spicy nacho flavor but my kids prefer the cool ranch and I also use the juice from the lime and cilantro rotel to my meat while mixing the seasonings

    Please, please Babish, try queso with charred poblanos and anaheim peppers, trust me. That is the way some of us do it here in México. Just char them over an open flame or preferrably over charcoal or wood, let them sweat in a plastic bag for easy skin peeling and then incorporate them in the early stages of cheese melting, it is nice and spicy, adds great color and takes your queso to a place you didn't know it could go.
